Seasoning Griddle
Seasoning your griddle is the process of baking oil into the metal to prevent the cast iron surface from rusting and to create a non stick surface. Note: Your Greystone griddle has a thin layer of soy oil on it from the factory to prevent rusting during shipping and needs to be washed off with soap and warm water before seasoning.

Choice of Seasoning Oil
You want to choose an oil with a high smoke point and that can withstand high temperatures without breaking down. Flax Seed oil is one of the best and creates a glossy, hard surface and easily applies in thin, even layers. Grape Seed and Avocado oil also work well

Seasoning Process
Start with a clean surface and apply a thin coat of oil to the entire griddle surface. Spread the oil evenly with a paper towel. Turn the griddle on and heat to a high temperature, letting the oil smoke and oxidize for about 10-15 minutes. Repeat this process multiple times until you have built up a nice seasoned layer.

Cleaning
While the griddle is warm, use a paper towel to wipe away food, grease, or drippings, a plastic scraper works well to loosen stuck-on food. Rinse with hot water to help break down grease and any remaining stuck on food. Dry griddle and apply a thin layer of oil to protect the surface from oxidizing.
